A recipe perfect for you or, for two.
This recipe approximately makes 6 pancakes in total.
Ingredients
200g self-raising flour
2 ripe bananas
2 medium eggs
125ml almond milk
butter for frying
maple syrup to serve
Method
- Sieve the flour into a large bowl with a light sprinkle of salt.
- In a separate bowl mash your two bananas or, quickly blitz through a blender. Whisk your eggs into the mixture and combine with the almond milk.
- Make a well in the centre of the bowl containing your flour and gradually whisk the wet mixture in to create your smooth pancake batter.
- Heat a small knob of butter in a wide none stick pan over a medium heat. Add 2-3 spoonfuls of the mixture to your pan and cook for roughly 4 minutes or, until you see air bubbles. Flip the pancake over and cook for a further 2 minutes on the other side. Repeat this process until there's no batter remaining.
- Serve with a drizzle of maple syrup.
I've been meaning to try out some fluffy pancake recipes and I love the sound of these! They seem super simple to make as well so I'll have to give them a go :) x
